When your fabric does not have spandex, that means the stretch it contains is the natural stretch that comes with knit fabrics (often called mechanical stretch). It will not bounce back well when stretched. Jersey without spandex can be used for looser fitting patterns with simple turned hems (not cuffs).

Knits with spandex have extra stretch that comes from that specific fiber. They will "recover" or bounce back to their original shape. When your knit has spandex, you can create tight-fitting garments that will stretch around the body but not lose shape.

Ponte, double knit, and scuba can be loosely lumped together. They tend to be thicker than jersey and their stretch percentage can vary (check the listing!). These are often synthetic fibers.

Yes, you CAN use swim fabric for something other than swim! Don't be afraid to use a swim knit in the same way you'd use a jersey with spandex. Test against the light to see if it needs a lining, but otherwise you can sew with swim to make garments without any special consideration.
